Lentil Dal

  A simple, creamy Indian dish. Eat with rice and Indian bread for a vegetarian meal.
Ingredients:
  2 tbsp   extra virgin olive oil
  1/2 tsp   turmeric
  2 tsp   garam masala
  2 inches   ginger, peeled
  1 cup   red lentils
  2 cups   water
  2 tbsp   cilantro
  1/4 cup   plain yogurt
Directions:
  In a small saucepan, heat oil over medium low heat. Add turmeric and garam masala and saute until fragrant. Smash ginger with the flat side of a knife and add to pan with lentils and water. Bring to a boil, reduce heat and simmer 15 minutes, until lentils are tender. Salt to taste. Garnish with cilantro and yogurt.
