Hawaiian Sausage and Rice Bake

Healthy Hint
To reduce the fat in each serving of this casserole by about 25 grams, use turkey kielbasa or smoked turkey sausage in place of kielbasa. |
Ingredients: |

1 1/4 cups |
|
water |
|
2 tbl |
|
butter |
|
6.20 oz |
|
fast-cooking long grain & wild rice mix (with seasoning packet) |
|
1/2 cup |
|
pineapple preserves |
|
1 lb |
|
cooked kielbasa, halved lengthwise, cut into 1-inch slices |
|
1 |
|
medium onion, finely chopped |
|
1 |
|
medium green bell pepper, cutin into 3/4-inch pieces |
|
8 oz |
|
pineapple chunks in unsweetened juice, undrained |
Directions: |
|
1. Heat oven to 375 degrees. In small saucepan, bring water and butter to a boil
2. In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.
3. Bake at 375 degrees for 40-50 minutes or until rice is tender. Let stand 10 minutes before serving.
