Green Chili Rice

  Wonderful side dish for a Mexican Fiesta.
Ingredients:
  1 Tbsp   Butter
  1 C   Chopped onion
  4 C   Cooked rice
  2 C   Sour cream
  1 C   Cottage Cheese
  1 tsp   Salt
  1 tsp   Pepper
  16 oz   Chopped green chilis
  2 C   Cheddar cheese, grated
Directions:
  Grease 2 qt. baking dish.
Saute onion in butter.
In large bowl, mix cooked rice and onion/ butter.
Mix in sour cream, cottage cheese, salt and pepper.
In baking dish, layer half of rice mixture, half of green chilis, and half the cheddar.
Repeat layers.
Bake uncovered for 25 min at 375 degrees until cheese melts.
