Greek Roasted Chicken

  Roasted chicken with Greek seasonings - not a traditional Greek recipe. Suggest serving with rice and herbed green beans. Oven browned potatoes and dilled peas are accompaniments, too.
Ingredients:
  1 ea   whole chicken
  1/2 cup   evoo
  1/2 cup   lemon juice
  2 tsp   dried oregano (or,1 t ground)
  3 cloves   garlic, grated
  2 tsp   rosemary
Directions:
  Place washed chicken on a rack. If desired, rub the inside cavity with salt. Mix all other ingredients together and pour half of the mixture over the chicken making sure to rub some on the side that is down as well. Bake at 375 for 45 min. Pour the other half of the seasoning/oil mixture over the chicken and return to oven for at least additional 30 min - chicken is done when juices run clear, the drumsticks wiggle freely, and it is nicely browned.
