Garlic Lemon Butter Sauce

  A delicious sauce that goes well with vegetables (especially green beans and asparagus), fish (especially salmon) and shellfish, poultry, pork, pasta, rice, and anything else you can dream up. You may need to double the recipe for main dish items.
Ingredients:
  1/4 c.   butter (1/2 stick = 1/4 c.)
  2 T.   lemon juice
  1 clove   garlic, minced
  1   zest of a lemon (optional)
Directions:
  Mince the garlic and zest & juice the lemon.

In a small sauce-pan over low-medium heat, melt about a tsp. (for a single, 4-serving recipe) of butter, and saute the minced garlic until it becomes fragrant (about a minute), stirring constantly. If the butter and garlic starts to smoke, start over.

Add the remaining butter. Stir until it melts. Slowly, while whisking constantly, pour in the lemon juice. Whisk until well-combined. Remove from heat and pour over your prepared dish. Top with optional lemon zest.
