Flexible Quiche

  This is my favorite quiche recipe, because it lends itself well to variation. I've used bacon or sausage in place of the ham--same measurements--and mozzerella in place of the swiss--same measurements. For an extra boost, I've also added a small package of thawed, frozen spinach that has been drained, and had all the water squeezed out before being chopped. As long as you have the crust, eggs, and cream cheese, you're good to go!
Ingredients:
  1 c   Ham cubes
  10   Eggs
  1 pkg   Low-fat cream cheese
  1 c   Shredded swiss cheese
  1   Frozen pie crust
  1 jar   Favorite salsa
Directions:
  1. Preheat oven to 350
***2. Mix 1 package cream cheese together with eggs in bowl.
***3. Mix eggs and ham together, pour into pie crust(s).
***4. Top with shredded swiss cheese.
***5. Bake until golden brown and knife inserted comes out clean.
6. Top with your favorite salsa & enjoy!
