Eggs |

Green pepper, diced |

Large white onion. diced |
|

Small tomato, diced |
|
1/4 cup |
|
Cheddar cheese, shredded |

1 Tbsp |

Cumin |

1 Tbsp |

Dry ground mustard |

2 Tbsp |

Crushed red pepper |

Directions: |
|
In a medium mixing bowl, whisk eggs for a minute or two. Add spices to eggs (cumin, dry ground mustard, crushed red pepper, salt and black pepper). Whisk. Heat large skillet over medium heat. Add green pepper, onion, tomato, and cheese to the mixing bowl and stir with a fork. Pour egg mixture into heated skillet. Scrape, lift, and fold with a spatula until eggs are done.
