Festival

serves: 6
Festival is a fried cornmeal dumpling shaped into long fingers. It's a traditional accompaniment to 'Jerk' dishes like Honey-Jerk Chicken.
Ingredients:
  1 cup   yellow cornmeal
  1 cup   flour
  2 tsp   baking powder
  3 tbsp   sugar
  1 tsp   salt
  1   egg
  1/2 cup   ice water
2 cups   oil for frying (I like peanut oil)
Directions:
Mix everything together and add only enough ice water to get a soft dough, yet manageable with your hands. Scoop up a couple tablespoons of dough and roll between your palms until as long as your palm and about 1/2 inch wide. Drop into hot oil (about an inch deep) and fry until golden, turn and cook a total of about 1-2 minutes. Drain on paper towels. Serve immediately.
