Felafel Pita Sandwiches

The original veggie burger! Delicious, spiced garbanzo bean patties pan fried and served in a pita pocket. |
Ingredients: |

4 cups |
|
garbanzo beans, cooked (2 cans) |
|
2 tsp |
|
cumin |
|
1 tsp |
|
turmeric |
|
1 tsp |
|
salt |
|
6 |
|
green onions, minced |
|
1/4 cup |
|
parsley, minced |
|
1/4 cup |
|
water |
|
1 tbsp |
|
lemon juice |
|
1/8 tsp |
|
cayenne pepper |
|
1/3 cup |
|
flour |
|
1 cup |
|
light olive oil, for frying |
Directions: |

Rinse and drain garbanzo beans. Combine everything except flour and oil in food processor and pulse until uniformly mashed, or mash in a bowl with a fork or potato masher. Add flour and stir until just combined. Heat a heavy skillet over medium heat and add about 3 tbsp oil. Once the oil is hot, drop heaped tablespoonfuls of the batter into the pan, flattening them slightly. Saute about 10 minutes on each side until golden browned and crisp. Add oil as needed. Drain on a paper towel lined plate and keep warm in a 300 degree oven until all the batter is used. Serve in pita bread with lettuce, tomato and a drizzle of lemon juice if desired.
