Favorite Lemon Rice

  Rice Side Dish
Ingredients:
  1 cup   uncooked rice
  1 tbsp   evoo
  1 tsp   lemon juice
    minced garlic to taste
  1/4 tsp   black pepper
  2 cups   chicken broth
  2 TB   parsley
Directions:
  Combine rice, margarine, lemon juice, garlic, black pepper & broth in 2-3qt saucepan. Bring to a boil; stir once or twice. Reduce heat; cover & simmer 15 min or until rice is tender & liquid is absorbed. Stir in parsley.
