Enchilada Chicken

  Super easy and fast Enchilada Chicken. Takes about 10 minutes.
Ingredients:
  5 each   4oz Boneless Skinless Chicken Breast
  2 tsp   Mrs Dash Southwest Chipotle
  5 tbsp   enchilada sauce
  2.50 oz   shredded mexican cheese blend
Directions:
  Preheat oven to 350

Season each chicken breast evenly on all sides.

Place a large ovenproof, nonstick skillet over high heat. When hot, lightly mist with olive oil spray and add the chicken. Cook, turning once, for 1-2 minutes per side or just until the chicken is browned on the outside.

Remove pan from heat and top each chicken breast with 1 tbsp enchilada sauce followed by 1/2 oz cheese. Put skillet in oven and bake for 4-6 minutes or until chicken is no longer pink inside and cheese is melted.
