Easy Vegetable Soup

Home made veggie soup that is easy to prepare and yummy to eat. I like to serve it with rolls. I also add any other veggies I have to use up. |
Ingredients: |

onion, chopped |
|
2 tbsp |

evvo |
|
1 tsp |
|
garlic, minced |
|
2 cups |
|
carrot, chopped |
|
1 cup |
|
celery, chopped |
|
1 can |
|
tomatoes, diced |
|
3 cartons |
|
beef stock |
|
1 cup |
|
cheddar cheese, shredded |
|
1/2 package |
|
elbows, Barilla plus (abt 7 ounces dried) |
Directions: |

Cook onions in olive oil until lightly browned, adding garlic when onions are almost borwned. Add carrots and celery. Pan roast for 10 minutes. Add tomatoes and beef stock. After bringing to a boil, turn heat down and simmer until veggies are tender about 30 minutes. Fifteen minutes before veggies are done add elbows. Cook until elbows are just tender. Serve with cheese.
