Brown ground beef. Drain. Add taco seasoning, diced tomatoes, corn, kidney beans, and cheese. Bring to a boil, stirring occasionally. While soup is cooking, cut tortillas in strips and then cut strips into smaller bite-sized pieces. Add tortillas to soup when it reaches a boil and simmer for 5 minutes. Spoon into bowls and add a dollop of sour cream. Serve with Mexican rice, chips/salsa, or another side dish of your choice!
