Easy Pork Medallions

Easy meal in 30 minutes. |
Ingredients: |

12 oz |
|
Pork Tenderloin |
|
1 Tbsp |
|
Butter |
|
1/2 C |
|
Milk |
|
1/4 tsp |
|
Dried oregano, crushed |
|
1 jar |
|
Sliced mushrooms, drained (2 1/2 oz0 |
|
1/3 c |
|
Sour cream |
|
2 tsp |
|
Dijon style mustard |
|
1 Tbsp |
|
Flour |
|
|
|
Hot cooked noodles |
Directions: |
|
Cut pork tenderloin crosswise into 3/4 inch thick slices.
Season with salt and pepper.
Cook pork in butter in a large skillet over medium heat until brown on both sides. (about 5 min. turning once)
Add milk, oregano, and mushrooms.
Bring mixture ot a boil.
Reduce heat.
Cover and simmer about 5 minutes or until pork is no longer pink.
Remove meat from the skillet and keep warm.
Combine sour cream, mustard and flour.
Add to skillet.
Cook and stir until thickened and bubbly.
Cook and stir for 1-2 minutes more.
Serve with pork over noodles.
