Easy Fried Rice

  This fried rice recipe combines the carbohydrates from rice with proteins from eggs and vegetables to make a tasty, affordable and easy dinner.
Ingredients:
  1 cup   Jasmine rice (dry)
  0.25 cup   Oil
  1 piece   Onion
  1 cup   Peas
  1 tsp   Salt
  1 tsp   Pepper
  4 tbsp   Soy sauce
  2 cup   Water
  4 pieces   Egg
Directions:
  Combine rice and water in 2 quart saucepan and bring to boil. Reduce to low, cover and let sit for 20 minutes. Chop the onion while the rice is cooking. Transfer cooked rice from saucepan to a flat dish. Spread the rice out so it can cool down quickly. When at room temperature, the rice is ready to be fried. Heat up a large frying pan or wok to high temperature (eight on a scale from one to ten). Add oil and rice and stir fry for five minutes. Add peas, onion, salt and pepper. Stir fry another five minutes. Push the rice to one side and add the eggs. Reduce temperature to medium low (four on a scale from one to ten). Scramble the eggs and mix in with the rice. Reduce to low. Pour the soy sauce over and stir. Serve while hot.
