Easy Chicken Mole

Simple version of chicken mole (red chile sauce); serve over rice. |
Ingredients: |

1 lb |
|
chicken |
|
1/4 cup |
|
flour |
|
5 tbsp |
|
chili powder or mole poblano seasoning |
|
2 cups |
|
chicken broth (from boiled chicken) |
|
3 tbsp |
|
oil |
|
2 cups |
|
mexican rice |
Directions: |
|
1. Boil chicken; (save hot broth for mole sauce); set aside.
2. Put oil and flour in pan, brown flour over medium heat.
3. In a bowl mix chile powder (or mole poblano seasoning) with about 1/2 cup of the hot broth
4. Add that mix into the pan with the browned flour.
5. Add the chicken into the pan.
5. Then add the remaining broth, should be enough to cover the chicken.
6. Simmer on medium-low heat, allow sauce to thicken a bit, for about 20 min.
7. Serve over mexican rice.
