Dorothy's Potato soup

serves: 8
  made from scratch potato soup
Ingredients:
  8 med   russet potatoes
  1/2 med   onion
  2 stalks   celery
  2 lg   carrots
  1 c   heavy cream(or milk)
  1 dash   salt
  1 tsp   pepper
  1 c   cheese, any strong cheese
  1/8 c   corn starch, for thickening
  1 tbsp   butter
  1 tbsp   garlic , or one clove
  2 slices   bacon
Directions:
  peel and cube potatoes, place in pan with onions, garlic, carrots, and celery. cover with water, bring to a boil. Once potatoes are fork tender, mash in pan(in the water) simmer. add a tbsp of butter and cheese. cook to desired consistency or.....thicken with cornstarch mixture, 1/8 cup cornstarch and 1/4 c(approx) water in a covered jar and shake. stir slowly into bubbling soup.

to make this go further, add more water and thicken. add ham or bacon for a twist
