Dorothy's Potato soup

made from scratch potato soup |
Ingredients: |

|
russet potatoes |
|
1/2 med |
|
onion |
|
2 stalks |
|
celery |
|
2 lg |
|
carrots |
|
1 c |
|
heavy cream(or milk) |
|
1 dash |
|
salt |
|
1 tsp |
|
pepper |
|
1 c |
|
cheese, any strong cheese |
|
1/8 c |
|
corn starch, for thickening |
|
1 tbsp |
|
butter |
|
1 tbsp |
|
garlic , or one clove |
|
2 slices |

bacon |
Directions: |
|
peel and cube potatoes, place in pan with onions, garlic, carrots, and celery. cover with water, bring to a boil. Once potatoes are fork tender, mash in pan(in the water) simmer. add a tbsp of butter and cheese. cook to desired consistency or.....thicken with cornstarch mixture, 1/8 cup cornstarch and 1/4 c(approx) water in a covered jar and shake. stir slowly into bubbling soup.
to make this go further, add more water and thicken. add ham or bacon for a twist
