Cucumber Salad

Cucumber salad is a classic way to serve up fresh vegetables. This is my favorite version which incorporates fresh mint. |
Ingredients: |

English Cucumbers |
|
1/2 Cup |
|
Onion |
|
1 |
|
Large Tomato or 1 cup diced cherry tomatoes |
|
1/2 Cup |
|
White Vinegar |
|
1/2 Cup |
|
Extra Virgin Olive Oil |
|
1 tsp |
|
Salt |
|
1 tsp |
|
Black Pepper |
|
1/2 Cup |
|
Fresh Mint |
Directions: |

Prepare your cucumber, onion and tomato chopping into small bite sized pieces and place in a medium bowl. In a small bowl combine your Extra Virgin Olive Oil, White Vinegar, Salt and Pepper. Whisk these together to make the dressing then pour over your veggies and stir. Just before serving chop up your mint and mix this in. The mint adds a wonderful fresh taste but the leaves can become discolored if you add them earlier.
