Sweet and tangy pork roast. |
Ingredients: |

4 lb |
|
Boneless pork loin roast |
|
1 can |
|
Chicken broth |
|
1 jar |
|
Apricot preserves (18 oz) |
|
1 |
|
Onion, chopped |
|
2 Tbsp |
|
Dijon mustard |
|
2 Tbsp |
|
cornstarch |
|
2 Tbsp |
|
Water |
Directions: |
|
Mix broth, preserves, onion, mustard in a crock pot.
Add pork and turn to coat.
Cook on low for 8-9 hours.
For a thicker sauce, after cooking pork roast, remove from the cooker.
Mix in 2 Tbs cornstarch and 2 Tbs water in to crock pot.
Cook on high for 10 minutes or until the mixture boils and sauce thickens.
