Crock Pot - Chipotle Chicken Stew

  Chipotle Chicken Stew
Ingredients:
  1 lb   boneless, skinless chicken breasts, cut into cubes
  1 tspn   salt
  1 tspn   groun cumin
  1   bay leaf
  1   chipotle pepper in adobo sauce, minced
  1 medium   onion, diced
  15 oz   navy beans, rinsed and drained
  14 1/2 oz   crushed tomatoes, undrained
  15 oz   black beans, rinsed and drained
  1 1/2 cup   chicken broth
  1/2 cup   orange juice
Directions:
  Combine chicken, salt, cumin, bay leaf, chipotle pepper, onion, beans, tomatoes with juice, broth, and orange juice in crock pot.

Cover; cook on LOW 7 to 8 hours, or on HIGH 3 1/2 to 4 hours. Remove bay leaf before serving.
