Crispy Sweet Potato Fries

Serving Size: 1 cup
Ingredients:
  2 lb   uncooked sweet potatoes, scrubbed
  1 Tbsp   olive oil
  1/4 tsp   salt
  1/4 tsp   pepper
Directions:
  Preheat the oven to 450 degrees.
Halve the potatoes and cut into 1/2 inch wedges.
Toss with the oil, salt, and pepper in a bowl.
Arrange the potatoes in a single layer on a nonstick baking sheet.
Bake, turning once, until browned and crisp, about 35 minutes.
