Crispy Pan-Fried Fish

  Use any white fish you prefer. (Sole, halibut, cod, etc.)
Serve with steamed spinach and rice pilaf for a filling but light meal.
Ingredients:
  8   fish fillets, approx. 8 oz each
  4 Tbsp.   lemon juice
    salt and pepper
  2   eggs
  1 1/2 cups   bread crumbs
    Olive Oil
  4 Tbsp   unsalted butter
