Crispy Jicama Salad

Ingredients:
  1   jicama, large
  1   carrot
  1   bell pepper
  1/2   onion
  2 tbs   chives
  3 tbs   vegetable broth
  1   lime
  1   orange
  1 tsp   mustard
Directions:
  Wash and prepare veggies: shred jicama, peel and shred carrot, dice bell pepper, dice onion, chop chives if using fresh. Place veggies in a large bowl. Juice the lime and orange. Whisk veggie broth and mustard into the juice. Toss dressing with veggies. Serve cold.
