Ingredients: |

|
chicken breast - skinless |
|
|
|
pepper |
|
4 cups |
|
fresh mushrooms |
|
1/2 cup |
|
Scallions - sliced |
|
2 cloves |
|
Garlic-minced |
|
1 cup |
|
Half & Half - Fat Free |
|
1/2 cup |
|
Mozarella - shredded-fat free |
|
4 tbsp |

Italian Bread Crumbs |
Directions: |

In a large skillet sprayed with Pam cook chicken with pepper. Add mushrooms, scallions, and garlic to chicken to cook. Once fully cooked, drained off any excess drippings.
Add Fat Free Cream until simmering. Reduce heat and add mozzarella cheese until melted. Mix in bread crumbs and mixture will thicken.
Serve over whole-grain pasta or whole grain rice.
