Creamy Chicken Alfredo, Low Fat & Low Calorie

  This is a wonderful recipe, cut in half for 4 servings.
Ingredients:
  29 oz   chicken breast - skinless
    pepper
  4 cups   fresh mushrooms
  1/2 cup   Scallions - sliced
  2 cloves   Garlic-minced
  1 cup   Half & Half - Fat Free
  1/2 cup   Mozarella - shredded-fat free
  4 tbsp   Italian Bread Crumbs
Directions:
  In a large skillet sprayed with Pam cook chicken with pepper. Add mushrooms, scallions, and garlic to chicken to cook. Once fully cooked, drained off any excess drippings.

Add Fat Free Cream until simmering. Reduce heat and add mozzarella cheese until melted. Mix in bread crumbs and mixture will thicken.

Serve over whole-grain pasta or whole grain rice.
