Creamy Au Gratin Potatoes

Ingredients:
  4   Russet Potatoes
  1   Onion
    salt & pepper to taste
  3 Tbsp   butter
  3 Tbsp   flour
  1/2 tsp   salt
  2 c   milk
  1 1/2 c   shredded Cheddar Cheese
Directions:
  1. Slice Potatoes into 1/4 inch slices. Slice onion into rings. Preheat oven to 400 degrees. Butter a 1-quart casserole dish.
2. Layer 1/2 potatoes on bottom of dish.Top with onion slices. Layer remaining potatoes. Season with pepper and salt to taste.
3. In med saucepan, melt butter over medium heat. Add flour and salt and stir constantly for one minute. Stir in milk. Cook until sauce thickens. Stir in cheese all at once and continue stirring until completely melted. Pour over potatoes and cover with foil.
4. Bake 1 1/2 hours in preheated oven.
