Cornbread Dressing

  This is a lower calorie version of a traditional recipe. We love this especially the crunchy crust on top.
Ingredients:
  2 Boxes   Jiffy Cornbread
  5 Large   Carrots
  4 Medium   Celery Stalks
  1 Cup   Onion, diced
  2 Cans   Chicken Broth
  1 Tbsp   Olive OIl
  1/2 tsp   Poultry Seasoning
Directions:
  Heat olive oil in skillet add onions and start to carmelize. Then add celery and carrots cooking until just soft. Combine bread and broth with veggies and any seasonings . Mix well, be careful not to break down bread to much. put into a pan and bake at 350 degrees for about 30 minutes.
