Colcannon

Classic Irish mashed potatoes with cabbage. Great with corned beef, Irish 'Bacon', or sausages. |
Ingredients: |

potatoes, peeled, quartered |
|
16 oz |
|
shredded cabbage |
|
1/4 cup |
|
butter |
|
1/2 cup |
|
green onions, chopped |
|
2/3 cup |
|
milk, warmed |
|
1 tsp |
|
salt |
|
1/2 tsp |
|
black pepper |
Directions: |
|
Place quartered potatoes in a large saucepan, add water to cover. Boil until tender, about 15 minutes. With a slotted spoon, remove cooked potatoes to a bowl, keep warm. Add cabbage to boiling potato water and cook 10 minutes. Drain well. Melt butter in a skillet. Add green onions and drained cabbage and saute 1 minute. Mash potatoes or use a potato ricer, add warm milk and cabbage mixture and mix well. Season with salt and pepper.
