Colcannon

  Classic Irish mashed potatoes with cabbage. Great with corned beef, Irish 'Bacon', or sausages.
Ingredients:
  4   potatoes, peeled, quartered
  16 oz   shredded cabbage
  1/4 cup   butter
  1/2 cup   green onions, chopped
  2/3 cup   milk, warmed
  1 tsp   salt
  1/2 tsp   black pepper
Directions:
  Place quartered potatoes in a large saucepan, add water to cover. Boil until tender, about 15 minutes. With a slotted spoon, remove cooked potatoes to a bowl, keep warm. Add cabbage to boiling potato water and cook 10 minutes. Drain well. Melt butter in a skillet. Add green onions and drained cabbage and saute 1 minute. Mash potatoes or use a potato ricer, add warm milk and cabbage mixture and mix well. Season with salt and pepper.
