Cinnamon Sweet Potatoes

  This fast Paleo and Gluten free friendly recipe is sweet and satisfying. Perfect as a side dish at dinner or even with breakfast.
Ingredients:
  4   Sweet Potatoes (peeled and cubed into 1/2" squares)
  2 tsp   Cinnamon
  1 tsp   Salt
  1 tsp   Dried Parsley
  2 Tbsp   Coconut Oil
Directions:
  Peel and cube your sweet potatoes into 1/2" squares, set aside. Add 2 Tbsp of Coconut Oil to a skillet and turn the heat to a medium setting. Once the coconut oil has melted to a liquid add the potatoes, stirring to ensure the oil is evenly distributed. Add cinnamon, salt and dried parsley then stir again. Put the lid on your skillet and turn the heat down to medium low heat for 10 minutes. Open the lid and stir potatoes letting them cook 5 more minutes allowing the potatoes to brown up a bit. Serve warm as a side dish with dinner or even replace regular breakfast potatoes. *Paleo and Gluten free friendly recipe.
