Christmas Cream Punch

This is a Trinidadian holiday drink similar to eggnog. It's easy to make yourself and tastes terrific especially when made ahead. This recipe is adapted from Roger Mooking on the Cooking Channel and Food Network Magazine, 12/11. |
Ingredients: |

1 cup |
|
Egg beaters (or 4 pasteurized eggs) |
|
1 |
|
lime, zest only |
|
14 oz |
|
can sweetened condensed milk |
|
3/4 cup |
|
dark rum |
|
1/4 tsp |
|
fresh grated nutmeg |
|
1 tsp |
|
Angostura bitters |
Directions: |

In a large bowl, whisk the egg beaters and lime zest until combined. Add the condensed milk, rum, nutmeg, and bitters. Whisk until smooth. Strain into a pitcher, cover and refrigerate overnight or up to 3 days. Stir before serving. Serve over ice.
