Chili's Chicken Enchilada Soup

  Tastes very much like Chili's Enchilada Soup
Ingredients:
  1/4 cup   vegetable oil
  1/8 cup   chicken base
  1 1/2   yellow onions, diced
  1 tsp   ground cumin
  1 tsp   garlic powder
  1/4 tsp   cayenne pepper
  1 cup   Masa Harina
  1 cup   whole tomatoes, crushed
  1/3 lb   Velveeta
  2 lb   chicken, cooked & cubed
Directions:
  In large pot place oil, chicken base, onion and spices. Saute until onions are soft and clear, about 5 minutes. In another container, combine Masa Harina with 1/2 quart of water. Stir until all lumps dissolve. Add to sauteed onions adn bring to boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stiffing constantly. This will eliminate any raw tast from Masa Harina. Add remaining 1 1/2 quarts water to pot. Add tomatoes, let mixture return to boil stirring occasionally.

Add cheese to soup. Cook, stirring occasionally, until cheese melts. Add chicken; heat through.
