Instructions
i. Preheat oven to 375 degrees.
ii. Spray a cookie sheet with non-stick spray.
iii. In a bowl, beat egg until mixed.
iv. Slice chicken into strips and dip into egg. Then, dredge chicken in bread crumbs until coated.
v. Place chicken on tray and place in oven. Bake for about 10 minutes each side; or, until chicken is opaque and juices run clear.
vi. Prick sweet potato and bake in a preheated, 450-degree oven for about 35 minutes.
vii. Steam cauliflower until tender (about 5 minutes).
