Chicken Bacon Quesadillas

  Filling enough to be a dinner by itself! This is a hearty, flavorful quesadilla sure to please kids and grown-ups alike! This recipe is for 8 quesadillas. Try serving with guacamole, sour cream, or salsa for a southwestern treat.
Ingredients:
  16   10-inch flour tortillas
    olive oil
  6   boneless, skinless chicken breasts
  4 cups   shredded jack cheese
  4 med.   tomatoes
  1 sm.   onion
  4 cups   bacon pieces
  1 sprig   cilantro
Directions:
  Before you assemble the quesadillas, you will need to prepare the ingredients:

a. grill the chicken breasts using whatever method you prefer, and cut into strips.
b. dice the tomatoes and strain excess liquid
c. finely chop the cilantro
d. dice the onion
e. fry up the bacon pieces and drain excess grease

For each Quesadilla:

1) Heat a 12" skillet over medium heat, and coat with olive oil.

2) Place 1 tortilla in the pan; add about 1/2 cup cheese, leaving about 1 inch around the edges of the tortilla.

3) Add about 1/8 of the chicken, bacon, tomatoes, and onions.

4) Sprinkle a small amount of cilantro on top of the other ingredients.

5) Top it all off with another tortilla.

6) When the bottom tortilla has browned, flip the quesadilla over and grill the other side.

7) Remove the quesadilla from the pan, and use a knife or pizza cutter to cut into triangles.

8) Repeat process for the remaining 7 quesadillas and enjoy!
