Cheesy Zucchini Spears

This is a delicious way to serve up zucchini. |
Ingredients: |

Zucchini (Clean and chopped into spears) |
|
1 |
|
Egg (whisked) |
|
1 tsp |
|
salt |
|
1 tsp |
|
pepper |
|
1 clove |
|
Garlic (finely minced) |
|
1 cup |
|
Parmesan Cheese |
|
1 cup |
|
Bread Crumbs |
|
1 cup |
|
Ranch Dressing (divided into 4 dipping bowls) |
Directions: |

Clean zucchini and chop into spears about 4" long and 1/2" wide. Wisk one egg in a bowl that is at least 5" wide, adding salt and pepper. In another bowl at least 5" wide combine parmesan cheese and bread crumbs. Set up an assembly line with a stack of Zucchini Spears on one end and a bowl with the egg in the middle and then the bowl with bread crumbs and cheese on the end. *GREAT PROJECT FOR KIDS TO HELP PREP* Dip each spear first in egg, then cheese and bread sticks and place on a baking pan lined with parchment paper or on a baking stone so they don't stick. Place in the oven at 425 degrees for 20-25 minutes. Serve warm with Ranch Dressing for dipping.
