In medium sauce pan par boil potatoes (about 10-13 min.) Remove from heat, drain, and set aside. In a large bowl combine Cream of Chicken soup, sour cream, cheese, garlic salt, pepper and onion. Mix until well blended. Peel and slice potatoes. Add potatoes to mixture and stir making sure potaotes get coated with creamy mixture. Transfer to a 8x8 baking dish. Bake in over at 350 degree for 50-60 minutes.
