Cheese Stuffed Meatloaf

  Meat loaf
Ingredients:
  2 tbls   olive oil
  3/4 cup   finely chopped onion
  1/2 cup   finely chopped celery
  2 tsp   minced garlic
  1/2 cup   minced Italian Parsley
  1 tsp   salt
  1/4 tsp   pepper
  1 3/4 tsp   chili powder
  1 1/4 tsp   cumin
  3/4 cup   salsa
  2   eggs
  1 1/2 lb   lean beef
  3/4 cup   bread crumbs
  1/4 lbs   sliced mozz cheese
Directions:
  Step 1
Heat oven to 350 In a skillet, saute the onion, celery, garlic, and parsley in the oil over moderate heat until softened but not browned. With a slotted spoon, transfer the vegetables to a large bowl.

Step 2
Add all remaining ingredients, except cheese, to the vegetables. Mix well with your hands.

Step 3
Transfer half the mixture to a 9X5 inch loaf pan. Place mozz slices on top, then cover with the res of the meat mixture.

Step 4
Bake for 75-80 minutes or until meat thermometer reads 170.
