  Crispy seasoned pork for tacos, burritos, or as a main dish.
Ingredients:
  5 lb   boneless pork shoulder
  1/2 tsp   salt
  1/2 cup   tamale seasoning pkg
  1 dash   water
  1/2 cup   milk
Directions:
  Soften the seasonings with a little water to rehydrate the chili pepper a bit. Cover meat with seasonings and place roast in a cast iron skillet. Cook at 250 for 2 1/2 hours. Scrape off and discard seasonings, transfer meat to cutting board. Discard all grease in skillet except for 1-2 tsp. Cut meat into 1" chunks. Meat will generally fall apart, so these will not be tidy-looking chunks. Heat skillet and add meat. Add milk. When milk simmers, turn heat down and let cook on low until bottom is crispy, turn and repeat for other side. Patience pays off with this one - do not stir the meat mixture. It could take 20 mins per side to get crispy.
