2/3 cup |

old fashioned oats |
|
1/2 cup |
|
fat-free milk |
|
2 1/2 tbsp |
|
buffalo wing sauce |
|
1 lb |
|
extra lean ground chicken breast |
|
1/2 cup |
|
finely chopped celery |
|
1/4 cup |
|
shredded carrot |
|
1/4 cup |
|
chopped sweet onion |
|

large egg whites, lightly beaten |

1/4 tsp |

salt |

1/2 cup crumbled reduced-fat blue cheese |
Directions: |

Preheat oven to 350 degrees F. Lightly mist 9x5x3 non-stick loaf pan with olive oil spray. Combine oats and milk medium bowl, stir to mix. Let stand for 3 minutes until oats soften. Stir in wing sauce until well mixed. Add chicken, celery, carrot, onion, egg whites, and salt. With clean hands, mix together well. Add blue cheese and gently mix together. Transfer to to prepped pan, spread so top is flat. Bake 35-40 min.until chicken is cook through and no longer pink. Slice into 8 slices and serve immediately.
