INSTRUCTIONS:
1. Pre-heat oven to 350 degrees.
2. Coat a 3 qt casserole dish with nonfat cooking spray. Briefly sauté vegetables in small fry pan until vegetables are translucent or soft but not mushy.
3. Place all ingredients in casserole dish and cover.
4. Put in the oven and bake for 45 minutes or until all the liquid is absorbed. Serve as a delicious accompaniment with meats and seasonal vegetables.
