Heat oil in skillet over medium-high heat. Brown chicken both sides. Remove chicken and keep warm. Add apples and shallots to the skillet. Cook 2 minutes. Add thyme, salt and pepper. Cook 1 minute and then add broth or cider. Cook until liquid has reduced by half, about 5 minutes. Return chicken breasts to the skillet. Reduce heat to medium low, simmer till chicken cooked thru.
