Black bean tuna salad |
Ingredients: |

2 6 oz |
|
cans albacore tuna, drained |
|
1 15 oz |
|
cans black beans, drained and rinsed |
|
1 4oz |
|
can of green chilies, drained |
|
1 T |
|
chopped fresh cilantro |
|
1/4 cup |
|
light mayonnaise |
|
1/2 tsp |
|
chili powder |
|
1/4 tsp |
|
cumin |
|
1/4 tsp |
|
cayenne pepper |
|
1/4 tsp |
|
salt |
|
|
|
ground pepper (to taste) |
Directions: |
|
In a medium bowl, flake tuna with a fork, add beans, chiles, and cilantro and toss to combine.
In a small bowl, stir together remaining ingredients; add tuna mixture and carefully toss to incorporate ingredients.
Taste and adjust seasonings, if necessary
