Bean and Ham Soup

Good cold-day soup. |
Ingredients: |

1 1/2 C |
|
dry navy beans |
|
1 1/2 lb |
|
ham or ham bone with meat |
|
1 med |
|
potato, diced |
|
1 med |
|
onion, diced |
|
1/2 C |
|
celery, diced |
|
1/2 C |
|
carrot, diced |
|
1 clove |
|
garlic, minced |
|
3 whole |
|
bay leaves |
|
1/2 tsp |
|
dry parsley flakes |
Directions: |
|
Soak beans overnight in 1 qt. water; drain beans. Add 2 qt. fresh water. Heat to boiling; simmer 2 hours. Add ham, potato, onion, celery, carrots, bay leaves, and garlic. Simmer 1 hour. Sprinkle with parsley.
