Bean and Ham Soup

  Good cold-day soup.
Ingredients:
  1 1/2 C   dry navy beans
  1 1/2 lb   ham or ham bone with meat
  1 med   potato, diced
  1 med   onion, diced
  1/2 C   celery, diced
  1/2 C   carrot, diced
  1 clove   garlic, minced
  3 whole   bay leaves
  1/2 tsp   dry parsley flakes
Directions:
  Soak beans overnight in 1 qt. water; drain beans. Add 2 qt. fresh water. Heat to boiling; simmer 2 hours. Add ham, potato, onion, celery, carrots, bay leaves, and garlic. Simmer 1 hour. Sprinkle with parsley.
