Basic Curry

A basic potato and chick pea curry. Add any cooked meat you like. |
Ingredients: |

1/4 cup |
|
water |
|
1 tsp |
|
vegetable oil |
|
1 |
|
medium onion, diced |
|
2 cloves |
|
garlic, chopped |
|
1 tbsp |
|
curry (or to taste) |
|
2 |
|
medium potatoes, cooked and cubed |
|
1 can (19oz) |
|
chick peas |
Directions: |
|
Heat the water and oil in a heavy pot and add the onions garlic and curry powder. Cook at low heat until onions are soft. Add cooked potatoes and chick peas with juice (add cooked meat, poultry or seafood if you like) and cook for 30-45 minutes (until chick peas are soft). Cool and refridgerate overnight to thicken. Heat and serve the next day with roti's or rice. This recipe freezes well.
