Balsamic Chicken (JP)

Ingredients: |

2 each |

boneless skinless chicken breasts |
|
1/2 tsp |
|
fresh rosemary leaves, minced |
|
2/3 cloves |
|
garlic, minced |
|
1/4 tsp |
|
pepper |
|
1/4 tsp |
|
salt |
|
2/3 Tbsp |
|
extra virgin olive oil |
|
2 Tbsp |
|
white wine (optional) |
|
1 1/3 Tbsp |
|
balsamic vinegar |
Directions: |

Rinse chicken and pat dry. Combine the rosemary, garlic, pepper and salt, mix well. Drizzle oil on chicken and rub with spice mixture. Cover and refrigerate overnight.
Bake chicken in roasting pan for 10 minutes at 450 degrees. Stir white wine or water in drippings and turn chicken and bake for an additional 10 minutes. Drizzle vinegar over the chicken in the pan. Transfer chicken to plates. Stir remaining liquid in pan and drizzle over chicken.
