Baked Pesto Chicken

  This is South Beach Diet recipe that I have made for years. It is quick and easy to prepare, and my kids love it.
Ingredients:
  4   boneless, skinless chicken breasts
  1/2 cup   pesto (I use Classico)
  2 oz   shredded part-skim mozzarella
    garlic salt
    ground black pepper
Directions:
  Heat oven to 375.
Season chicken breasts with salt and pepper. Spread 1/4 cup of the pesto in the bottom of a 9x13 baking dish. Put chicken breasts on top of pesto and then spread remaining pesto on top of the chicken.
Cover baking dish with foil and bake chicken 25 minutes. Remove foil and top chicken breasts with mozzarella cheese. Bake about 5 more minutes until cheese is melted.
