Baked Oatmeal

  Food that will feed the soul: warm, hearty baked oatmeal. Rich without being unhealthy.
Ingredients:
  2 c   oatmeal
  3/4 c   sugar
  1/2 tsp   baking soda
  1/2 Tbsp   baking powder
  1 Tbsp   cinnamon
  dash   salt
  2   eggs
  2   bananas, mashed
  1/2 c   unsweetened applesauce
  1 c   evaporated milk
  1/2 Tbsp   vanilla
Directions:
  Preheat oven to 350 degrees. Mix dry ingredients. Mix liquid ingredients together and pour into dry ingredients, mix well. Coat 9x13 pan with cooking spray. Pour batter into prepared baking dish. Bake for 25-30 minutes or until toothpick comes out clean. Let cool.
