Baked Greek Chicken

Baked Chicken Breasts with peppers, onions, potatoes and Greek spices |
Ingredients: |

1 lb |
|
Bonless, skinless chick breasts |
|
1 medium |
|
red bell pepper |
|
1 medium |
|
green bell pepper |
|
1 medium |
|
yellow bell peper |
|
1 medium |
|
yellow onion |
|
2 medium |
|
russet potatoes |
|
2 Tbs |
|
greek seasoning |
|
1 Tbs |
|
olive oil |
Directions: |
|
Cut chicken into strips or cubes. Slice all the peppers and onions. Cut potatoes into thin wedges.
Place all ingredients into a bowl and toss with olive oil and greek spices. Salt and pepper to taste. Place the mixture into a greased 9x13 pan and bake, covered, at 350 for about 40 mintues or until potatoes are tender and chicken is cooked through (may vary by oven)
**Can be served with plain yogurt, pita bread or rice as side dishes**
