Avocado and Greek Yogurt Chicken Salad Sandwich***

Ingredients:
  1   Avocado, Pitted & Peeled
  3/4 Cup   Greek Yogurt, Plain
  1 Tbs   Lemon Juice
  1   Green Onion, Diced
  1 Tsp   Dill, Dried
  1 Tsp   Garlic Powder
    Salt & Pepper
  3 Cups   Shredded Chicken, Cooked
  1/2 Cup   Celery, Diced
  1/4 Cup   Almonds, Slivered
  4   Ciabatta Rolls
    Green Leaf Lettuce
  1   Tomato, Sliced
Directions:
  Cook and shred chicken.

1.In a medium bowl mash the avocado until smooth, then add in the greek yogurt, lemon juice, dill, garlic powder, green onion, salt and pepper, stir to combine.

2.Gently toss the chicken, celery, and almonds in the avocado and greek yogurt mixture

3.Prepare the ciabatta rolls (you can toast the rolls if you want) with lettuce and the sliced tomato. Divide the chicken salad mixture among the sandwiches.

4.Enjoy.
