Ambrosia Waldorf Salad

Ingredients: |

1 C |
|
fresh or frozen cranberry halves |
|
1/2 C |
|
sugar |
|
3 C |
|
miniature marshmallows |
|
2 C |
|
diced, unpeeled apples |
|
1 C |
|
green grapes, halved |
|
3/4 C |
|
pecans, chopped |
|
1 can |
|
pineapple tidbits, drained (20 oz) |
|
2 C |
|
heavy whipping cream, whipped |
|
1/2 C |
|
shredded coconut |
Directions: |
|
Combine cranberries and sugar. In a large bowl, combine marshmallows, apples, grapes, pecans, and pineapple. Add cranberries; mix well. Fold in whipped cream. Cover and chill for at least 2 hours. Sprinkle with coconut before serving.
