1930 American Meatloaf

serves: 6
  mix of 2 lbs of meat- 50% chuck, 25% ground pork, 25% ground veal.




Glaze: 1/2 cup ketchup, 4 tablespoons brown sugar, 4 teasp. white vinegar)
Mix: 2 lbs meat- 50% chuck, 50% ground pork, 25%ground veal.
Beat together: 2 larg eggs, 1/2 tsp. thyme, 1 tsp. salt, 1/2 tesp. ground black pepper, 2 tesp.Dijon mustard, 2 teasp. Worchester sauce, 1/4 teasp, red hot pepper sauce. Ade1.2 cup whole milk and 1 1/3 cup fresh bread crumbs.--After mixing add to meat and mix together with the meat.
Bake in oven at 350. After putting in loaf pan, put 1/2 of glaze on top, cover the sauce with bacon slices(about 8), tucking ends of bacon under edges of meat. Cover with remaining sauce and bake for 1 hr., let cool 20 min, before slicing,

  1/2 cup   ketchup

  2 teasp   oil
  1 med   onion
  2 large   eggs
  1 tsp   salt
  1/2 tsp   ground black pepper
  2 tsp   Dijon Mujstard
  2 tsp   Worchestershire sauce
  1/4 tsp   hot pepper sauce
  1/4 cup   milk
  1 1/3 cup   breadcrumbs
Directions:
  saute onions and garlic before adding
you can substitute equal amt. of plain yogart or reconstituted powederd dry milk in place of whole milk,
