*Spiced lentil and coconut soup

serves: 4
  lentil and veg. soup with coconut milk
Ingredients:
  2 Tbsp   Olive oil
  1 med   red onion, finely chopped
  1 clove   garlic, crushed
  1 med   carrot, finely chopped
  1 tsp   ground cumin
  1 tsp   ground coriander
  1 cup   red lentils
  4 1/2 cups   veg. stock
  2   leeks
  7 oz   coconut cream
  1 bunch   fresh cilantro
Directions:
  Cook onions, garlic and carrots in oil for 3 mins.
Add spices and cook 2-3mins
Stir in lentils, stock and seasonings, bring to a boil and pour into slow cooker
Cover and cook 5-7hrs on low
Add coconut cream for last 30mins.
Season with salt and pepper to taste, garnish with cliantro
